Named after Aurora ( The Roman goddess of dawn), and Boreas (the Green name for north wind), this amazing spectacle, also called the Northern Lights, is caused by charged particles accelerated into the Earth’s upper atmosphere along magnetic field lines. The energy to drive this display is provided by the sun, in the form of a “solar wind”. The sun may be millions and millions of miles away, but it is the reason we see the extraordinary sight. Aurorae come in all colors, shapes and patterns, setting the night sky alive with rainbows of light. The variations in color are due to the type of gas particles that are colliding from yellowish-greens, blues and purples, to fiery reds, and oranges. The playful streaks that snake across the night sky evolve and change constantly and can last minutes or merely seconds. One thing is for sure, the end result is always truly spectacular.

Apex Waterloo Place Hotel
This hotel occupies a large Georgian building in the New Town area of Edinburgh and is conveniently located close to the city’s main transport links. Situated on the east end of Princes Street, you’ll be centrally located and just minutes from key attractions like Edinburgh Playhouse and George Street shops, restaurants and bars. Situated a stone’s throw away from Calton Hill, the Georgian hotel epitomizes luxury living in the heart of Edinburgh. Chic interiors and modern fittings beautifully complement the hotel’s traditional features and our pool, steam room and sauna make this perfect place for romantic getaways.
The Georgian features of the building make it both timeless and elegant. Completed in 1819, it was the first purpose-built hotel in Edinburgh and although the contemporary furnishings now reflect the modern traveler, its charming character is still one of its most distinguishing features.

Traditional Scottish dishes fused with globally-inspired bursts of flavor are served up in our bright and spacious Georgian surroundings. Whatever the occasion, you are in for a truly decadent experience.
Boasting stunning period features and a bright, airy space, our Georgian restaurant is one of the chicest places in the city to enjoy a bite. Come and see how our chefs present food that’s as beautiful as the space.
Open since 1995, the simple cooking and warm, friendly atmosphere has allowed The Mustard Seed to become one of Inverness’s restaurants. The Location on the banks of the River Ness in a converted church building is simply stunning and helps create the wonderful ambience.
The transformation from disused church to restaurant created a unique space; with a double-height ceiling and magnificent open log fire. Many of the original period features were retained and combined with a mix of natural and modern finishes. The addition of the terrace on the top floor allows alfresco dining and uninterrupted views of the River, another amazing asset for the restaurant.
